Put the nuts in a large bowl and cover with water. Soak from 1 hour to 3 hours.
Rinse and put in the blender with the rest of the ingredients. Blend until you have the consistency you want.
Notes
You can use lemon or lime; just start with a tablespoon and try it. If you need more, add little by little. You can substitute apple cider vinegar with rice vinegar or another mild vinegar.
