This spicy Mezcal Cocktail is the perfect mix of smoky and sweet, with a little bit of spice to boot. Made with mezcal, lime juice, jalapeño simple syrup, and soda, it's sure to be your new favorite drink!
Combine the lime juice, spicy jalapeno syrup, and mezcal, and mix vigorously for about 10 seconds. Pour into a rocks glass with a salty rim and filled with ice, finish with soda water. Garnish with thinly sliced jalapeño slices.

HOW TO MAKE JALAPEÑO SIMPLE SYRUP?Put 1/2 cup of water + 1/2 cup of sugar + 3 slices of jalapeño in a small saucepan over low heat until all the sugar dissolves. Turn off the heat and let it cool.Remove the jalapeño slices and use it in the watermelon margarita or store it in the refrigerator in a tightly covered jar.HOW TO PREPARE A SALTED RIM?Rub a halved lime or lemon on the rim of each glass and then invert the glass onto a plate with two tablespoons of kosher salt.
