This
iced coconut milk coffee with dates
is smooth, refreshing, and just the right amount of indulgent. Perfect for slow mornings, busy afternoons, or whenever you need a little pick-me-up.

Ingredients

can of coconut milk
4
cups
of water
½
cup
of cold espresso or strong brewed coffee
4-6
pitted dates
1
teaspoon
vanilla extract
Pinch
of sea salt
Pinch
of cinnamon
Ice for serving
Instructions
Make the Coconut Milk
Blend the coconut milk and water until smooth.
Pour into a glass jar and refrigerate.
Brew the Coffee
Make a strong espresso or a bold cup of coffee.
Let it cool completely.
Sweeten the Coconut Milk
Blend 1 ½ cups of your homemade coconut milk with 4 dates, vanilla, salt, and cinnamon.
Taste and add more dates if you want it sweeter.
Serve Over Ice
Fill two glasses with ice.
Pour the sweetened coconut milk halfway up the glass.
Top with coffee and stir.
Notes
Make It a Blended Drink (Optional)
For a frosty, blended version, mix the coffee, coconut milk, and ice together in a blender until smooth.
